Eight years.
Single Malt Whisky release 49.
Well over eight years ago in Loch, we brewed a pale malt profile wash, double-distilled it & then rested it in a single Margaret River WA ex-Chardonnay 100L cask.
The result is our oldest release to date and possibly our favourite so far!

Over & over & over.
Coriander seed is second to Juniper in order of importance when making London Dry Gin.
Prior to distillation, we stone grind the coriander seeds to release their wonderful fragrance & oils.
Twelve years ago, we used a large mortar & pestle, now it is at least mechanised & our arms are thankful!

Juniper
Juniper is the predominant ingredient & flavour in London Dry style gin.
We only make London Dry GIn at Loch Distillery & if you are sitting in our distillery garden you can see a couple of Juniper trees.
One interesting fact is the berries take nearly a couple of years to mature on the tree, changing from bright green to deep bluish/purple.
