Malt profile
One thing that sets us apart from other whiskies is the fact that the malt recipe for each of our three whiskies is the same as three of our core beers.

Hydrometers
For hundreds of years, hydrometers have been an integral part of brewing & distilling, helping determine fermentation & alcohol strength.
This brass Sikes hydrometer was made by Dring & Fage around the 1880s. It was adjusted/calibrated by Reeves at the end of 1924, dated from the handwriting underneath the case.
Reeves later be Steevenson Reeves, who sold us our modern glass hydrometers one hundred years later!

Angelica is one of the botanicals we use in our Classic Gin. We have a number of Angelica plants growing in our distillery garden & it flowers at this time of year. The stem of the flower is well over a metre tall!

It's Negroni Week!
To celebrate one of our favourite cocktails this weekend, we are serving three different versions at our cellar door in Loch.
We have, of course, our barrel aged Classic Gin Negroni, served straight from the cask!
For those looking for a slightly different twist, we have a Whisky Negroni & Rum Negroni. One made with our Single Malt Whisky & the other our Dark Rum, both mixed with different Italian amaros instead of sweet vermouth.

Harrie
A very sad week for us here at the Distillery, our loyal friend Harrie has left us after nearly fourteen years.
She would keep an eye out for passers-by when the cellar door was closed & if given the chance, she would always say hello.
Even though we don't believe she owned a watch, she had an uncanny knack of knowing when closing time was & would take any opportunity to sneak into the cellar door to hopefully help clean up any chips or snacks customers may have dropped!
Always happy to have a sit with you (or preferably on you), she was friendly, happy & patient, putting up with cats, chooks & small children playing with her.

Weather
This week, as like most of south-eastern Australia, the winds were ferocious in Loch.
Unfortunately, the large Claret Ash in the distillery garden succumbed to the change that came through in the early hours of Monday morning.
One half crashed down, damaging the new Satsuma plum trees, the remaining half with trunk severely compromised, was left hanging precariously over the barrel warehouse.
Luckily, we contacted Evan from South Gippsland Tree Care & Monday afternoon, he & his team turned up to help.
This photo shows Evan bringing the last of the tree down, even during the hail & wind.
We can't thank Evan & his team enough for making the tree safe in such a short time & in such a professional manner.

That would have been after he left from cleaning up our downed trees at Meeniyan. Evan & his team worked through wind, rain & hail at our place too. They do a great job.
Evan and his team are fabulous. Coming to me this week for cleanup!
What an absolute tragedy to loose the claret ash! Unless you appreciate trees of this age, people just don’t get it. Evan certainly knows his stuff.
Stamp Duty
How we wish stamp duty on properties were this cheap again!
Here is the actual first stamp duty (found on the original title) paid on the cellar door property in 1888, twelve years before the Union Bank was built.
